Black Truffles

Tuber melanosporum - a.k.a the black truffle - is a hard-to-find 'underground' mushroom that grows widely in the Drôme hills, in loose limestone soil under oak trees. Known as 'black diamonds' in French cuisine, these truffles are harvested and sold between December and February. Truffle married with butter, French-style scrambled eggs, ravioli, cardoon soup or foie gras to name but a few, will enchant the most discerning palates.
